How to make broccoli pizza

These ingredients are enough to make two small pizzas, enough for 4 to 6 people. So you can double or reduce the ingredients as you like.

the ingredients

Dough ingredients:

  • 227 grams of sourdough starter 
  • 350 grams of bread flour
  • 2 tablespoons of granulated sugar
  • ½ teaspoon active dry yeast 
  • 180 grams of ice water 
  • 1 tablespoon of olive oil 
  • 1 teaspoon of salt 

Ingredients for the white sauce (Béchamel):

  • 2 tablespoons of butter
  • 2 tablespoons of flour 
  • 1 cup of milk 
  • Half a teaspoon of white pepper 
  • One teaspoon of freshly grated nutmeg 
  • 1 teaspoon kosher salt

Garlic sauce ingredients:

  • Whole head of garlic, peeled and separated  
  • 1 cup olive oil (enough to cover the garlic)
  • 1 teaspoon of salt 
  • 1 teaspoon freshly ground pepper
  • 3 dried hot peppers 
  • 1 bay leaf

Garnish ingredients:

  • olive oil 
  • Crushed garlic clove 
  • Shredded mozzarella cheese 
  • Steamed broccoli  
  • white sauce
  • Garlic confit 
  • Grated parmesan cheese

How to prepare

Dough preparation: 

Add the starter, flour, sugar and yeast, and process until all ingredients are well combined, gradually adding water until sticky. 

  • Leave dough covered in mixer 10 minutes; to allow the gluten to rest. 
  • Add 1 tablespoon of olive oil and salt, knead the dough until it is completely homogeneous. 
  • On a lightly oiled work surface, shape the dough into a ball. Then place the dough in an oiled bowl and cover with a lid or plastic wrap. 
  • Let it rest for 12-24 hours, and then take it out and cut it into two equal parts. 
  • Form each portion into a ball and leave, covered, at room temperature for 1 to 2 hours before baking.

Preparation of the white sauce (Béchamel) :

  • Melt the butter in a medium saucepan over medium/high heat. 
  • Add the flour and beat until there are no lumps left. 
  • Slowly add the milk, just a few tablespoons at a time, and whisk to mix. 
  • Cook for an additional 5 minutes, until firm. 
  • Add white pepper, nutmeg and salt. 
  • Leave to cool and keep in the refrigerator until ready to use.

Garlic confit method

  • Mix all ingredients in a small saucepan.
  • Cook it on low heat for 30 minutes. 
  • Let it cool before removing the garlic cloves, and reserve the garlic-infused oil.
  • Store garlic cloves in an airtight container in the refrigerator until ready to use. 

Now it's time to assemble and decorate :

  • Place a pizza stone or baking steel on the top rack of the oven, and heat it to 250°C. 
  • Form a ball of dough and flatten it, brush it with olive oil and crushed garlic clove, add grated mozzarella and steamed broccoli. 
  • Bake immediately for 12-15 minutes, rotating the pizza periodically; For an even brown colour.
  • Remove the pizza from the oven and let it cool slightly before slicing and serving.
